We are all reading about nutrition … the rules seem to change daily! It can be confusing, but Calypso has served the same healthy dishes for 16 years throughout countless diet trends. No question, eating a low-fat, high fiber diet rich in nutrients and colorful produce is good for you, but you also need to satisfy your desires… you deserve to enjoy your food! You will see our ingredients over and over again in health-related columns: chicken, beans, tomatoes, onion, green leaf lettuce (never iceberg at Calypso!), fruit, mustard greens, sweet potatoes, corn, cabbage, carrots, almonds, tuna, etc. We also use generous amounts of spices including garlic and peppers. Many items can be tailored to fit your needs: vegans often order the Black Bean Salad without dairy or we can make this fantastic salad low-fat by taking away the chips and dairy or the Lucayan Salad can be trimmed down by substituting the Lite Vinaigrette dressing (but don’t cut the almonds, THEY’RE SO GOOD FOR YOU!). Best of all, even with these modifications, you will not be hungry! Going low fat? Satisfying meals with 7 or less grams of fat and less than 500 calories: ¼ white chicken, skinless (add fat free BBQ or Curry sauce), Beans and your choice of Rice, Fresh Fruit or Sweet potatoes Lite Tuna Salad with Honey Mustard or Tuna salad on pita, Rice and Fresh Fruit Beans and Three, with Calalloo Greens, Fresh Fruit and Sweet Potatoes or with: Mixed Bean Salad, Rice and Fresh Fruit The following items are low-fat (3 grams fat per serving or less) Cuban Black Beans Martinique Calalloo Greens Rice Bean and Corn Salad, drained Spiced Sweet Potatoes Soups: available seasonally Shrimp Gumbo Vegetarian Chile Chicken Pasta Soup Tomato Basil Soup Bean and Barley Soup Vegetable Stew Barbecue Sauce Curry Sauce Jerk Sauce Fresh Fruit Honey Mustard dressing Pita Bread Skinless quarter of chicken, white meat Cuban Black Bean Dip (without cheese, sub pita for tortilla chips) Chicken Breast Sandwich with Honey Mustard Boca Burger on Pita Going Vegetarian?
